What’s under that vegetable skin? Vitamins and micro minerals! I love the synergy of vegetables and fruit – that it’s possible and nutritionally perfect to eat the whole thing (there are some exceptions of course). Vegetables store a lot of their vitamins and essential minerals in the skin or just under it. When we peel an organic potato or apple we immediately loose some of its value. Consume it whole and make the most of what lies beneath.
