Omelette with Kale

  • 2 generous handfuls of kale
  • 2 medium sweet potatoes, thinly sliced
  • 1 tbsp olive oil
  • 6 eggs
  • half a red pepper (sliced) - optional
  • pinch of salt


  • Preheat the oven to 170C/340F
  • Sautee 2 handfuls of kale in olive oil for 5 mins
  • Place the sweet potato slices on a baking tray (Try lining with foil so they don't stick). Drizzle sweet potatoes with olive oil and bake for 20 mins, until soft
  • Beat the eggs in a bowl and add the kale, sweet potato slices, red pepper and a pinch of salt
  • Pour the mix into a frying pan and slowly heat through. To set the top, use the residual heat from the oven by placing the frying pan onto the shelf. Be careful if the frying pan has a plastic handle
  • Test to see if the omelette is cooked by pressing the top with a knife, no egg should ooze out

Serve warm with salad or a side of Kale!
